ALMOND COOKIES

WHAT YOU NEED

200 g almonds
1 TBSP melted coconut coil
100 mL maple syrup
4 TBSPs whole wheat flour
Chocolate chips or dried raisins

INSTRUCTIONS

Pre-heat the oven to 180°C. Line a baking sheet with parchment paper. 
Grind the almonds in a food processor until almonds are ground to a coarse meal. Transfer to a bowl. Next, mix in the melted coconut oil, maple syrup and flour. Mix well then add in the chocolate chips. Take a TBSP of the mixture, roll into a ball using wet hands, and lightly flatten the tops of the cookies into discs. 

Bake in the preheated oven until the cookies are set and the bottoms are gold, about 8 minutes. Cool slightly then remove to a rack. Wet hands when shaping the cookies. 

The longer you bake them, the crispier they get.
